Bacon, Spinach, & Sweet Potato Frittata

Frittatas. Can we just talk about this wonderful word for a moment?

#1 - Who got to name this breakfast deliciousness and how did they come up with it?!

#2 - For some reason anytime I hear "Frittata" I like to say it like the hyenas from the Lion King say "Mufasaaaa" in that one scene where they are sitting around giggling hysterically about it (Ed primarily). Try it out next time you make a "Frittataaaaa".

#3 - I hear "frittata" and automatically think of Disney Movies... but can you guess what my husband think of? Tatas. Of course. He always asks if he can have "tatas with the frittata" hahahaha. 

Frittatas are my favorite because they are SO easy to make. All you need to do is decide on a couple ingredients, saute them in your cast iron skillet, pour eggs over it, and throw it in the oven for 20 minutes. The options are truly endless and I hope that you guys experiment with making your own too! I usually just make a frittata based off of what is in the refrigerator, but this combo is one of my favorites. 

P.S. I use my Lodge Cast Iron Skillets for all of my frittatas! If you don't use cast iron in your kitchen yet, I HIGHLY recommend getting at least one. They are a game changer.

Bacon, Spinach, & Sweet Potato Frittata

Prep Time: 25 minutes              Cook Time: 20 minutes                      Servings: 3-4

 

Ingredients:

8 Pasture Raised Eggs, beaten

8 Pieces of Bacon

1 Small Sweet Potato (peeled and thinly sliced, and then chopped into quarters)

1/2 Onion, diced

1-2 Large Handfuls of Baby Spinach

4 oz. mushrooms chopped in halves (optional)

1 tsp. Salt

2 garlic cloves, minced (or 1 tsp. garlic granules)

1/2 c shredded cheese (optional)

 

Instructions:

1. Preheat oven to 350 degrees.

2. In a 10-12 inch oven safe pan (Lodge Cast Iron is the BEST), cook your bacon (I had to do 2 batches to fit it all into the pan). When finished, remove and set aside on paper towels.

3. Add the onion, sweet potato, garlic, and salt, and stir frequently for about 8-10 minutes, or until tender.

4. Add the mushrooms and then a couple minutes later the spinach and cook until wilted. At this point, add any other seasonings you would like to use! 

5. Chop the bacon slices into quarters, then add it to the pan, mix all the ingredients one more time, and then pour the beaten eggs over the top. Tilt the pan to make sure everything is covered and immediately place into the oven.  

6. If using a 10-inch pan, bake for 20 minutes. If you want to add cheese on top, take it out after 15 minutes, sprinkle the shredded cheese on top, and place back in the oven for another 5 minutes. If using a 12 inch pan, bake for 15 minutes. If you want to add cheese, take it out after 10 minutes and place back in the oven for an additional 5 minutes.
