One of my favorite parts of recipe creating/experimenting is going back to the recipes favorites that I used to make as a child and creating gluten-free/refined-sugar free/healthier versions of them!
Delicious food definitely evokes emotions and strong memories! I remember specific meals that my husband and I ate on her anniversary trip to Europe (even down to what they looks like)! And that is why I love re-creating these foods that I used to eat as a kid. Plus, it's also like I'm sharing a part of my childhood with my husband too!
This is one of those recipes. My siblings and I used to make these no-bake chocolate oatmeal cookies with our mom and they were awesome - albeit very sugar filled, so this is my healthier but still amazingly delicious version! Enjoy y'all!
No Bake Chocolate Oatmeal Cookies
Prep Time: 15 minutes Cook Time: 0 minutes Servings: 12
1/2 c grass fed butter or ghee (8 tbsp)
1/3 c coconut palm sugar
6 TBSP unsweetened cocoa powder or cacao powder
1/3 c pure raw honey or maple syrup
1/2 c almond milk
1/2 c organic, raw almond butter or peanut butter
1 tsp. vanilla
3 c gluten free Quick cooking oats
1/4 tsp. salt
1/4 c shredded coconut (optional)
1. In a large saucepan, heat up the butter, coconut palm sugar, cocoa powder, honey/maple syrup, and almond milk. Stirring constantly, bring to a boil and then continuing to stir, boiling for 1 minute.
2. Remove from heat and mix in your choice of 1/2 c almond butter or peanut butter.
3. Add the vanilla, oatmeal, and salt and mix well.
4. Place wax paper or parchment paper on top of a cookie sheet and drop the mixture by spoonfuls onto it, sprinkle with shredded coconut (optional) and then put into the freezer until firm. Enjoy!
